Brewery
• New Chiller—A new chiller was purchased in 2019 to increase production numbers, and relocated it to the outside in biergarten to reduce excess heat in the brewery.. This has reduced the inside heat load significantly by 15-20 degrees which in turn took the strain off our air conditioners and brewing systems.
• Cold Storage Building—Built in 2020, this on-site storage designated for kegs only have provided us the ability to produce and store beer for events, keg sales, and create greater diversity in our lineup of craft beers available to guests. The Texas Hill Country is a wonderful wedding destination and the business already has connections at some of the finest venues. The cold storage room has a dual usage with exterior taps and bar for private events.
Kitchen
• New Equipment— A second line of cooking with an expanded range with eight burners, an additional fryer, and an expanded 72” flat top for cooking have all increased output.
• Relocated Back Lot Coolers—Created an exterior back door in the kitchen that allowed staff access to walk-in coolers without walking through the dining room/dancehall. This utility lot redesign (included trash bins, grease trap, propane tanks and all outdoor walk-in coolers) has created a more productive and safer work space. In addition, the redesign helped to free up room to expand biergarten seating and lounge areas.
Restaurant
• Increase seating by at least 15%—Adding additional seats at the bar and changing the layout of the dining room increased seating capacity and flexibility for large parties during high volume while still providing “cozy” places to enjoy a meal with family and friends.
• Cosmetic improvements–Upgraded paint, lighting, updated restroom surfaces, and a new front entrance have heightened the overall guest experience.
