The current owner was born in the Piedmont Region of Italy. He grew up learning family recipes and techniques from his grandmother before attending culinary school in Italy. After moving to the United States, he worked as a private chef while concentrating on opening Salumeria Obello in Sonoma County. His focus was on pursuing his passion for creating his artisan salumi. The Chef specializes in hand crafted salami, pancetta, guanciale, coppa and sopressata, along with varieties of fresh sausages. His father had owned a successful bakery in Italy for several years, where the Chef worked. It was a great fit as he applied his knowledge and skills when opening Ovello. He features unique creations including; different types of focaccia daily, as well as Italian desserts, grissini (breadsticks), lingue di suocera (crackers), and other enticing Italian fare. Ovellos is also known far and wide for its porchetta (roasted pork), roasted chicken, ragu, and many other Italian foods.
